Creamy Dijon & Tarragon Beef Stew

This is one of those comforting beef dishes that tastes as if you have spent all day in the kitchen, even though most of the cooking takes care of itself.

Thin strips of beef are slowly braised until beautifully tender, then finished with a creamy sauce flavoured with Dijon mustard, tarragon and a touch of tomato. It is rich, savoury and perfect for a cosy dinner.

Cut Beef
Cut the beef into strips across the grain.

Heat the butter in a frying pan over high heat.

Brown the beef quickly in batches. Season lightly with salt and pepper and transfer to a heavy-bottomed saucepan or casserole.
