Parmesan & Panko Crusted Salmon with Chive Hollandaise

This Parmesan and panko-crusted salmon is topped with a crispy, golden crust and served with lemon-roasted potatoes, asparagus and a creamy chive hollandaise. The salmon stays beautifully juicy while the Parmesan and panko add plenty of flavor and crunch. A fresh and easy dinner that works just as well for a weekday meal as it does for the weekend.

Salmon filletin portion pieces 800 g
Small potatoes 500-600 g
Green asparagus 250 g
Lemon 1
Olive oil 2 tbsp
Panko 1 dl
Finely grated parmesan 1 dl

Directions

Preheat Oven
Set the oven to 225 degrees Celsius.

Roast Potatoes
Halve the potatoes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Grate a little lemon zest over them and squeeze a little lemon juice. Roast in the oven for about 20 minutes.

Add Asparagus
Break off the woody ends of the asparagus and add the asparagus to the baking sheet with the potatoes for the last 8–10 minutes. Drizzle with a little olive oil and season lightly with salt and black pepper.

Prepare Panko Mixture
Mix panko, parmesan, pressed garlic, and parsley in a bowl. Mix with butter or olive oil until the panko and parmesan stick together.

Season Salmon
Place the salmon in a greased baking dish or on parchment paper. Season with salt and black pepper and top with the panko mixture.
